Classic Greek Salad with a Refreshing Lemon-Olive Oil Dressing

Ingredients:

  • 4 cups ripe tomatoes, chopped
  • 1 large cucumber, sliced into half-moons
  • 1 green bell pepper, sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled or cubed
  • 1 tablespoon fresh oregano leaves
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon red wine vinegar
  • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables:
    • In a large salad bowl, combine the chopped tomatoes, sliced cucumber, green bell pepper, red onion, and Kalamata olives.
  2. Make the Dressing:
    • In a small bowl, whisk together the olive oil, fresh lemon juice, red wine vinegar, salt, and pepper until well combined.
