Homemade Spaghetti Carbonara with a Twist | Easy Recipe

Ingredients:

  • 12 oz spaghetti (gluten-free or whole wheat if preferred)
  • 4 oz pancetta or bacon, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese (plus extra for serving)
  • 1/4 cup grated Pecorino Romano cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1/2 cup peas (optional, for added freshness)

Instructions:

  1. Cook the Spaghetti:
    • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
  2. Cook the Pancetta:
    • In a large skillet, cook the diced pancetta or bacon over medium heat until it’s crispy, about 5-7 minutes. Add the minced garlic and cook for an additional minute. Remove the skillet from the heat.
  3. Prepare the Sauce:
    • In a medium bowl, whisk together the eggs, grated Parmesan, and Pecorino Romano cheeses. Season with a pinch of salt and plenty of black pepper.
  4. Combine Pasta and Sauce:
    • Add the cooked spaghetti to the skillet with the pancetta and garlic. Pour the egg and cheese mixture over the pasta, tossing quickly to combine. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.
  5. Add Peas (Optional):
    • If using, stir in the peas and toss until they are heated through.
  6. Serve:
    • Serve the spaghetti carbonara immediately, garnished with fresh parsley and extra grated Parmesan cheese.

Notes:

  • The key to a perfect carbonara is tossing the pasta quickly with the egg mixture to prevent the eggs from scrambling.
  • For a richer flavor, you can use a mixture of half-and-half or cream with the eggs.
  • This dish is best enjoyed fresh, as the sauce can thicken when reheated.
