Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, thinly sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Optional: vegetables like asparagus or cherry tomatoes

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Salmon:
    • Place the salmon fillets on a baking sheet lined with parchment paper or lightly greased with olive oil.
  3. Season the Salmon:
    • Drizzle the olive oil over the salmon fillets. Evenly sprinkle the minced garlic, dried thyme, rosemary, and oregano over the fillets. Season with salt and pepper to taste.
  4. Add Lemon and Vegetables:
    • Arrange the lemon slices on top of and around the salmon. If using, scatter the vegetables around the salmon on the baking sheet.
  5. Bake the Salmon:
    • Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The cooking time may vary depending on the thickness of the fillets.
  6. Serve:
    • Garnish the salmon with fresh parsley and serve with the roasted vegetables and lemon slices.

Notes:

  • For a complete meal, you can add a side of quinoa, rice, or a green salad.
  • This dish is perfect for a quick weeknight dinner, offering both simplicity and flavor.
