  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

Instructions:

  1. Prepare the Filling:
    • In a skillet, heat the olive oil over medium heat.
    • Add the minced garlic and cook for 1 minute until fragrant.
    • Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
    • Remove from heat and mix in the crumbled feta cheese and sun-dried tomatoes (if using).
    • Season with dried oregano, dried basil, salt, and pepper. Let the mixture cool slightly.
  2. Stuff the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Using a sharp knife, carefully create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
    • Spoon the spinach and feta mixture into each chicken pocket.
    • Secure the openings with toothpicks or kitchen twine to hold the filling in place.
  3. Cook the Chicken:
    • Season the outside of each chicken breast with salt and pepper.
    • Heat a large oven-safe skillet over medium-high heat and add a bit of olive oil.
    • Sear the chicken breasts for 3-4 minutes on each side, or until golden brown.
    • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  4. Serve:
    • Remove the chicken from the oven and let it rest for 5 minutes before removing the toothpicks or twine.
    • Slice and serve warm with your favorite side dishes.
