Thai Green Curry

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Thai green curry paste
  • 1 can (400ml) coconut milk
  • 1 cup chicken or tofu, cubed
  • 1 cup mixed vegetables (bell peppers, carrots, bamboo shoots)
  • 1 tablespoon fish sauce (or soy sauce for a vegan option)
  • Fresh basil leaves for garnish

Instructions:

  1. Heat oil in a pan over medium heat. Sauté onion and garlic until softened.
  2. Add green curry paste and cook for 1 minute.
  3. Stir in coconut milk and bring to a simmer.
  4. Add chicken or tofu and mixed vegetables. Simmer until cooked through.
  5. Stir in fish sauce (or soy sauce) and garnish with fresh basil.
