Vegan Buddha Bowl

Ingredients:

1 cup cooked quinoa

1 cup roasted chickpeas

  • 1 cup steamed broccoli
  • 1/2 cup shredded carrots
  • 1/2 avocado, sliced
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions:

  1. Arrange quinoa, roasted chickpeas, broccoli, shredded carrots, and avocado in a bowl.
  2. In a small bowl, mix tahini with lemon juice, salt, and pepper. Add water to thin if needed.
  3. Drizzle tahini dressing over the bowl and serve.
