Ingredients:
1 cup cooked quinoa
1 cup roasted chickpeas
- 1 cup steamed broccoli
- 1/2 cup shredded carrots
- 1/2 avocado, sliced
- 1 tablespoon tahini
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions:
- Arrange quinoa, roasted chickpeas, broccoli, shredded carrots, and avocado in a bowl.
- In a small bowl, mix tahini with lemon juice, salt, and pepper. Add water to thin if needed.
- Drizzle tahini dressing over the bowl and serve.
