Energizing Single Mom’s Bundt Cake: A Power-Packed Recipe for a Busy Lifestyle

Ingredients:

  • 1 ¼ cups oat flour
  • ¾ cup protein powder (vanilla or unflavored)
  • 1 cup mashed ripe bananas
  • ½ cup natural peanut butter (smooth)
  • ¼ cup honey or maple syrup
  • ½ cup Greek yogurt
  • 2 large eggs
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ cup milk (any kind)
  • 1 tsp vanilla extract
  • Optional: ½ cup dark chocolate chips or dried fruit for added energy

For the Topping:

  • 2 tbsp chia seeds
  • 2 tbsp crushed nuts (almonds, walnuts, or pecans)

Instructions:

  1. Preheat Oven: Set your oven to 350°F (175°C). Grease a bundt pan well with non-stick spray or oil.
  2. Mix Dry Ingredients: In a large bowl, sift together oat flour, protein powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, mix the mashed bananas, peanut butter, honey, Greek yogurt, eggs, milk, and vanilla extract until smooth.
  4. Combine All Ingredients: Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chocolate chips or dried fruit if using.
  5. Pour into Pan: Transfer the batter into the prepared bundt pan. Smooth the top with a spatula.
  6. Bake: Place in the oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and Garnish: Let the cake cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely. Once cool, sprinkle with chia seeds and crushed nuts.
  8. Serve: Enjoy a slice of this energizing cake as a nutritious start to your day or a mid-afternoon boost!
