Ingredients:

  • 8 oz macaroni
  • 1 cup raw cashews, soaked for at least 2 hours
  • 1/2 cup nutritional yeast
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 clove garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Optional: chopped parsley or paprika for garnish

Instructions:

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a blender or food processor, combine the soaked cashews, nutritional yeast, lemon juice, water, olive oil, Dijon mustard, garlic, onion powder, paprika, salt, and pepper. Blend until smooth and creamy.
