1. Spaghetti Carbonara

Ingredients:

  • 200g spaghetti
  • 100g pancetta or bacon, diced
  • 2 large eggs
  • 50g Parmesan cheese, grated
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions:

  1. Cook the spaghetti according to package instructions until al dente.
  2. In a large pan, cook the pancetta or bacon until crispy. Add minced garlic and cook for 1 minute.
  3. In a bowl, whisk together eggs and Parmesan cheese.
  4. Drain the spaghetti, reserving some pasta water. Add the hot spaghetti to the pan with pancetta and garlic.
  5. Remove the pan from heat and quickly toss in the egg and cheese mixture, adding reserved pasta water if needed to create a creamy sauce.
  6. Season with salt and pepper, and garnish with chopped parsley if desired.
